Method
Grate the tomatoes and boil until they absorb their juices. Season with salt, pepper and olive oil. Whisk the eggs in a bowl and add them to the boiling tomatoes; as soon as the eggs “rise,” stir and add the cured meat. Serve with feta cheese.

This is a third-generation recipe.
“I remember it was sometime after August 15, and we were at the farm. My grandma Eleni was an excellent cook. She lit a fire, placed the grill on top and set about cooking in a big pan. My, what amazing flavors! I still remember them. I also follow my grandma’s recipes, of course.”
