INSTRUCTIONS
Mix in a bowl the egg with the flour and add a little ground chili pepper, salt and pepper. Remove the pit from the olives and add them to the batter. Pour olive oil in a frying pan and let it heat. Take amounts of the mixture with a spoon and fry.
Background:
This recipe comes from the region of Thouria, since they made fried olives with the first olives of the year as a custom for the harvest to be successful.
