ROCK SAMPHIRE

Rock samphire is a kind of wild celery that grows wild on rocky, salt-sprayed cliffs and along beaches. The plant has a bright green color and its leaves are elongated, soft and tender with a salty taste, which reminds us of celery. Rock samphire is considered as an appetizer and can be eaten either raw or cooked (boiled). Once steamed, it can be served as a salad with olive oil and lemon. Fishermen often put some rock samphire leaves in fish soups. Finally, rock samphire, like caper, can be pickled.
