Instructions
Pour ¼ glass olive oil in a deep frying pan. Cut zucchini and potatoes in small cubes and cook until softened. Grate tomato and add to saucepan. Next, add pepper, cut into cubes. Finally, add the salted pork and the feta cheese, cut into cubes, salt and pepper, and the beaten eggs. The dish can also be prepared without potato and salted pork. Alternatively, you can also add some eggplant and/or okra, cut into small pieces.
Historical Background
In the past, zucchini omelet (zucchini tsik-tsik) was a very regular dish in Messinia since you could make it with whichever vegetable was available in your home garden according to season. It was usually made in summer and easy to prepare. It is a typical dish in the villages of the Koroni area, where zucchini are abundant.
Nutritional Value
Zucchini, the main ingredient, increase the antioxidant value of the dish while feta cheese constitutes a source of animal protein, calcium, phosphorus and vitamin D.
